My Winter Garden

So the things I planted back in the fall are just now starting to grow big.


Carrots, oregano, and mint! The mint smells sooooo good!

But my most favorite accomplishment is the beets. Beets are such super food, but no one wants to just eat them outright so I puree them and freeze them ice cube trays. Then sneak them into breakfast bread, chili, spaghetti sauce, soup, oatmeal, pancakes....Let's just say my family has gotten used to eating pink food. I kind of thought that since I am always buying them I should try to grow them.   

 And this is why I love Instagram. Look at this super cook picture I took of my beet shoots!

Kellyn pulled on up and I'm glad she did so I could see how big they were getting. They are still pretty small, but at least they are growing. Just another month or so and we will have our own fresh beets!
