So I am in this fruit and veggie co-op where every two weeks we pick up our shipment of organic produce. The lady that heads this up out of her home has been nice enough to create recipes for us so we will get use out of all the produce especially if it is something we wouldn't normally buy or eat like bok choy from last shipment and kale in this one. This is my revised version of the smoothie recipe we got with this shipment.
Kale Smoothies
a.k.a. Green Smoothie
1 bunch of kale
3 peaches
2 pints of strawberries
1/2 cup orange juice
1/2 cup water
blend together until you don't see any pieces of kale
Well as you can see it did not look very appetizing so I knew my kids were not going to touch this super food even though it really and truly did taste good. You couldn't taste the kale just the delicious strawberry and peach juice. So I decided to make juice pops out of it. Anything frozen is better, right.
And it worked! The kids AND my husband loved them. After dinner I surprised when I told them we were going to have juice pops for dessert!! They we so excited and ate them right away. Kellyn hugged me and said, "Thank you, Mommy. These are so yummy."
Since then I have been experimenting with different smoothie/ juice pop recipes. Here are a few new ones that turned out really yummy.
Rhett calls this one "Mango pop." This was his favorite
1 bunch of kale
1 pint of strawberries
1 mango
1/2 banana
1/2 banana
1/2 cup orange juice
2 tablespoons honey
1/3 raw beet shredded
This is my favorite
1/2 bunch of kale
1 peach
1 mushy banana
1 mushy banana
2 cups blueberries
1/2 cup orange juice
2 tablespoons honey
1/3 raw beet shredded
Despite the beet it still turns dark blue.
Berry Healthy Juice Pops
We all loved this one. I'm starting get the hang of this.
(you will need a cherry pitter)
25 Cherries
6 Strawberries
1/2 cup of blueberries
1/2 a bunch of Kale
1/2 cup orange juice
1 Tablespoon honey
Awesome!!! I am joining a co op next month, so keep those recipes coming! Where did you get those juice pop molds? I need to invest in a set for this summer!

ReplyDeleteI also made them with blueberries and mango and it didn't turn green.
